This small country may not make the list of the world’s most-famous coffee-producing countries like his neighbors Colombia and Brazil. Still, the specialty Arabica coffee is delicious; it is not very famous yet simply because the country’s harvest is small – and, unfortunately, in decline. Also, because of the dollarization of the country, the labor and farm husbandry, equipment gets expensive. At the same time, most farmers there are small (with just two to three hectares of coffee on their farms, they also grow other crops, such as cacao, cotton, and sugarcane, to survive.
The productivity is a third of let's say Colombia, but this is also playing a role in the concentration of the flavors in each cherry.
This micro-lot is the story of Mario, 2017 Barista Champion, And Denise both judges in sensory for the national competition Taza Dorada, both strong advocates for education and superior quality. They run El Chito Farm from which we selected this delightful Natural process, using a combination of Caturra and Typica. Volcanic soil, 1600ml of rain per year on average, and the perfect weather to produce stellar natural coffee with slow but controlled drying and ideal storage conditions.
