This chocolate is mostly made from CCN51 and ICS95 beans from the southern Pacific coast of Colombia. Tumaco was a region encouraged by the government to grow cacao. Since craft chocolate makers began importing it to the US in 2011, the farmers have increased their income from cacao by 70% thanks to the coaching and expertise they received from US craft chocolate importers.
This cacao is box fermented with temperature, pH, and sugar monitoring. It is then sun dried on raised beds with a roof and mechanical dryers. Beans are hand sorted for imperfections.
Small batch chocolate is best enjoyed at room temperature so the chocolate can quickly melt and coat your taste buds.
