55% cacao from CCN51 and ICS95 beans from the southern Pacific coast of Colombia is box fermented with temperature, pH, and sugar monitoring. It is then sun dried on raised beds with a roof and mechanical dryers.
Both the Colombian cacao and our Guatemalan coffee are fresh roasted to their respective profiles and then ground and mixed to balanced, creamy perfection.
Small batch chocolate is best enjoyed at room temperature so the chocolate can quickly melt and coat your taste buds.
